St. Patrick's Day Dinner

 Before March is over, I have to share our St. Patrick's Day Dinner. We tried to have everything be GREEN, of course!

 Alan helped Emma with her assignment to make an animal that Dr. Seuss would have made. It's called a "Poodle-Elephant." (NOT to be confused with an Elephant-Poodle). His name is Freddie.







 Brooke made this sheep, but it's different from all the rest. She told the teacher that she really needed some confetti to put on it. Just a plain old sheep wouldn't do. That's my girl-- going for the BLING!



SEW Much Fun!

 I was sewing this baby blanket for my friend Lish and his wife Whitney who just had a baby and Emma decided she wanted to learn, too! I was amazed at how quickly she picked it up. She is one girl that has such a strong desire to learn and will not take NO for an answer. She made this little sleeping bag for a teddy bear. 


I can't wait to see what Emma does with her life!

We got our first student loan repayment statement for law school in the mail this week. Let's just say it was a bad day for me. I need suggestions! What do you do when almost $2,000 per month goes to the minimum payments your debts (credit cards, loans, car payment etc). Any ideas on how not to freak out and beat yourself up every day for your poor decisions!?

Maybe some ideas other than drowning my sorrows in chocolate cake. . .I've been known to do that. . . a lot. lol!

I Heart Therapy

Soup Recipe

I pledge to try this recipe while the weather is still cold enough to want soup.



Vegetable Basil Soup Sunset Easy Basics for Good Cooking 1982
1 medium-size onion, chopped
1 large stalk celery, thinly sliced
1 large carrot, thinly sliced
3 tablespoons butter
1 large potato, peeled and cut into 1/2 inch cubes
2 large tomatoes, peeled, seeded, and diced
2 cans(14 1/2 oz each) regular strength chicken broth or 3 1/2 cups homemade chicken broth
1 teaspoon dry basil
1/2 head cauliflower, broken into flowerets
2 small zucchini, sliced 1/4 inch thick
1/2 package (10 oz) frozen peas
salt and pepper
Grated Parmesan cheese
In a 5 quart pan over medium heat, cook onion, celery, and carrot in butter, stirring occasionally, until onion is soft but not browned. Add potato, tomatoes, broth and basil. Bring to a boil; cover; reduce heat, and simmer for 15 minutes. Add cauliflower and zucchini; simmer for 10 minutes. Add peas and simmer until tender (about 5 minutes). Season to taste with salt and pepper. Pass Parmesan at the table. Makes about 10 cups.

We got a YARD!

Our apartment complex has started putting up fences for those who want them! We are on the bottom floor so we said YES! It's $50 extra a month which is VERY worth it to us. I want to put up a trampoline eventually!
